Ingredients

  • 2 lb sweet potatoes peeled and cut into 3/4-inch cubes
  • 1 tbsp olive oil
  • 0.5 tsp kosher salt
  • 0.25 tsp black pepper
  • 2 tbsp pure maple syrup

Equipment

  • 1 rimmed baking sheet

Method

  1. Heat the oven to 425°F.
  2. Toss the sweet potatoes with the olive oil, salt, and pepper.
  3. Spread the sweet potatoes in a single layer on a rimmed baking sheet.
  4. Roast for 20 minutes.
  5. Toss the sweet potatoes with the maple syrup.
  6. Spread the sweet potatoes in a single layer again.
  7. Roast for 10 to 15 minutes more, until the potatoes are fork-tender and browned at the edges.

Notes

For even browning, spread the potatoes in a single layer without crowding the baking sheet. Refrigerate leftovers for up to 4 days; freeze them for up to 3 months. Avocado oil can replace olive oil if needed.
