Ingredients

  • 1.5 lb carrots peeled and cut into 1/2-inch-thick rounds
  • 0.25 cup water
  • 0.5 tsp kosher salt
  • 2 tbsp unsalted butter
  • 2 tbsp honey

Equipment

  • 1 12-inch skillet with a lid

Method

  1. Combine the carrots, water, and salt in a 12-inch skillet with a lid and bring to a simmer over medium-high heat.
  2. Cover, reduce the heat to medium-low, and cook for 8 to 12 minutes, until the carrots are tender when pierced with a fork.
  3. Uncover and add the butter and honey; cook over medium heat for 2 to 4 minutes, stirring often, until the liquid is syrupy and coats the carrots.

Notes

Cut the carrots into evenly sized rounds so they cook at the same rate. Refrigerate leftovers in an airtight container for up to 4 days; freezing is not recommended because the carrots may soften. For a dairy-free option, use plant-based butter.
